Taffy Apple Salad

1 Tbsp flour
½ cup sugar
8 oz. can crushed pineapple, drained
2 Tbsp apple cider vinegar
1 egg
1 8-oz Cool Whip, thawed
4 cups (about 4) chopped & peeled Granny Smith apples
1 cup lightly salted dry roasted peanuts, chopped
  1. Mix flour, sugar, pineapple juice, vinegar and egg in a small pan.
  2. Stir over medium heat until thick.
  3. Refrigerate until cooled. (This mixture can be made ahead and kept in the refrigerator overnight. Bring to room temperature before mixing with other ingredients).
  4. Fold mixture into cool whip, pineapple, apples and ½ cup peanuts.
  5. Sprinkle with remaining peanuts and refrigerate.
