1 Tbsp flour
½ cup sugar
8 oz. can crushed pineapple, drained
2 Tbsp apple cider vinegar
1 egg
1 8-oz Cool Whip, thawed
4 cups (about 4) chopped & peeled Granny Smith apples
1 cup lightly salted dry roasted peanuts, chopped
- Mix flour, sugar, pineapple juice, vinegar and egg in a small pan.
- Stir over medium heat until thick.
- Refrigerate until cooled. (This mixture can be made ahead and kept in the refrigerator overnight. Bring to room temperature before mixing with other ingredients).
- Fold mixture into cool whip, pineapple, apples and ½ cup peanuts.
- Sprinkle with remaining peanuts and refrigerate.
