Fried Plantain Tostones

These are fun and easy to make.

  1. Cut rounds of plantain about 1½-inch thick.
  2. Fry them in about 360˚ oil in a fryer or deep pan until golden brown.
  3. Drain them on paper towel.
  4. While they are still hot, carefully squeeze them down between a hard surface and a plate until they are flattened to about ½ inch thick.
  5. Return them to the hot oil until they are deep brown.
  6. Drain them again, salt to taste, and serve them either hot or cold.
