Fried Plantain Tostones

These are fun and easy to make.
- Cut rounds of plantain about 1½-inch thick.
- Fry them in about 360˚ oil in a fryer or deep pan until golden brown.
- Drain them on paper towel.
- While they are still hot, carefully squeeze them down between a hard surface and a plate until they are flattened to about ½ inch thick.
- Return them to the hot oil until they are deep brown.
- Drain them again, salt to taste, and serve them either hot or cold.
