Brine for Pork Tenderloin

To make a brine for pork tenderloin, start with a base of 3/4 cup sugar and 3/4 cup kosher salt dissolved into 2 quarts of water. Add spices and or fruit juices to flavor the pork the way you like it.

Consider the following:

Black peppercorns
Sage
Rosemary
Garlic
Onion
Cranberry Juice
Orange Juice
Apple Juice
Oregano
Basil
Thyme

The spices can be either fresh or dried. Try a mixture and adjust for your personal tastes.

The salt in the brine will salt the pork enough, so be very careful if you do any additional seasoning after brining and cooking. If you use pre-mixed seasonings, they usually have salt in them, so your pork will be over-salted.

The pork can be brined for as little as 2 hours, or as long as overnight.

Rinse the brine off of the pork, then pat it dry before grilling or cooking it.
