Blueberry Pudding Cake

I love this easy recipe when I have fresh fruit. It works for peaches, blackberries, etc. Or mix your fruits!

Easy and Delicious!

2 cups blueberries
2 tbsp lemon juice
1 cup flour
2 tsp baking powder
¼ tsp salt
½ tsp nutmeg
¾ cup sugar
½ cup milk
1 egg
¼ cup butter, melted
1 tsp vanilla
1 cup sugar
1 tbsp cornstarch
1 cup boiling water 
  1. Place blueberries and lemon juice in an 8x8 inch pan.
  2. Mix flour, baking powder, salt, nutmeg, and ¾ cup sugar.
  3. Beat in milk, egg, melted butter, and vanilla.
  4. Spread over berries.
  5. Mix 1 cup sugar with cornstarch and sprinkle over batter.
  6. Pour boiling water over all.
  7. Bake at 350°F for 40 - 50 minutes.
